Lentil Orzo Soup

Servings: 8 to 9 people


1 tbsp. of vegetable oil

1 onion, diced

3 carrots, diced

5 cloves garlic, minced

2 cans (15 oz..) diced tomatoes

4 cups of chicken broth

4 cups of water

1 ½ cups brown lentils, rinsed

2 tsp of cumin

1 tsp garlic salt

¼ tsp of red pepper flakes

½ tsp. of salt & ½ tsp pepper

½ cup of orzo

2 cups of roughly chopped baby spinach


Select sauté and add oil to the Instant pot. When the display says hot, sauté onion and carrots in oil until tender (about 8 minutes).

Add garlic and cook for one more minute before adding the next 10 Ingredients (tomatoes-pepper).

Lock the Lid. Select the Manual function, set to cook at High Pressure for about 10 minutes.

When done, do a Quick Pressure Release and remove the Lid carefully. Add the orzo and simmer uncovered for 10 minutes or until orzo and lentils are tender.

(to simmer on Instant Pot, select the sauté button and press the adjust button twice to lessen the heat).

Add spinach and cook until it wilts before seasoning to taste with additional salt and pepper if needed.
